Home from a days work and want something quick and easy to prepare, then this seafood curry is perfect.
1 onion finely chopped
1 garlic finely chopped
1 head of broccoli cut into small flowerets
400g of seafood... Any seafood combo is fine, but white fish is best and choose a firm one that won’t break up in cooking
375g can of light and creamy Carnation coconut milk.
1 full desert spoon of Outback Chef's Australian Yellow Curry
This is a great curry for seafood, it's a Thai inspired curry with a combination of flavours including Aniseed Myrtle, Lemon Myrtle and Tasmanian Mountain Pepper
Fry onion and garlic in a little oil
Add Australian Yellow Curry and cook
Add broccoli flowerets
Add can of coconut milk and cook for about a minute
Add fish and when nearly cooked add green prawns and stir until cooked
Add roughly chopped fresh coriander on top.
